Things Required For the Dish:
1 tablespoon of olive oil
12 Baby Bella Mushrooms Clean by rubbing with a wet cloth, don't rinse
1/2 cup of sweet dice
2 chopped garlic cloves
1/4 cups of finely dried tomatoes, packed in olive oil
2 cups of baby spinach torn apart
1/3 cup of panko breadcrumbs, we use whole wheat panco
4 ounces of low-fat or fat free feta cheese
1/4 cup of parmesan cheese
Instructions
Step 1: Preheat the oven to 350 degrees.
Step 2: Remove stems from mushrooms and dice.
Step 3: In a medium pan, add oil and heat to medium-low, sauteed onions, mushroom stems and dry tomatoes until soft, about 4 minutes. Add minced garlic and keep waiting for an additional minute. Add spinach and saute until wilted. Remove from heat and add feta cheese and bread crumbs and only 3 tablespoons of parmesan, stir to combine.
Step 4: Mushroom items with mixtures, place it on the cake sheet, sprinkle with one tablespoon of parmesan, and heat until the cheese melts, about 15 minutes. * Very hot mushrooms out of the oven so make sure to cool a few minutes before served. This opening is warm or cold.
Note: Mushrooms can release liquid, so when removing from the cake sheet lightly with a paper towel before serving. Stuffed Mushrooms is a perfect dinner party appetizer.
